Recipe for quinoa and lentil salad.
Quinoa and lentil salad is a healthy, refreshing and rich choice for a summer lunch or dinner and the lentil stew doesn’t seem so appealing.
The level of difficulty is minimal, and in the end we get a very complete preparation with dairy products, legumes, cereals, vegetables and fish. Therefore it is ideal to be the main dish of a delicious meal.
Ingredientes para 4 raciones
Lam’bs lettuce | 150 g |
Cooked lentils | 400 g |
Cooked Quinoa | 250 g |
Fresh cheese | 1 unit |
Smoked salmon | 2 slices |
Dried tomatoes | 12 units |
Extra virgin olive oil | 1 tablespoon |
Oregano | 1 tablespoon coffee |
Salt | To taste |
Modo de preparación
1º In case of using raw lentils, soak them 24 hours before and boil. We can use jar lentils, which are a healthy alternative to speed up the preparation.
2º Cook the quinoa. We can also use quinoa for microwaves, if we do not have much time.
3º Soak the dried tomatoes for 2-3 hours.
4º Mix all the ingredients, using lamb’s lettuce, lentils and quinoa as a base and decorating with strips of smoked salmon, cubed cheese and dried tomatoes to obtain a delicious flavour.
5º Season with a spoonful of virgin olive oil, a pinch of oregano and salt to taste.
